Almond Pulp Brownies

Ingredients:
2 cups well drained almond pulp (Leftover pulp from making Almond Milk)
1 tsp vanilla extract
300 g coconut sugar
50 g oat flour
50 g cocoa
2 tsp instant coffee powder
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
To decorate: blanched almonds



Instructions:
1. Preheat oven to 170° C.
2. Whisk all wet ingredients in a large bowl.
3. Whisk all dry ingredients in another bowl
4. Add wet to dry ingredients. The mixture might seem dry initially, but keep stirring until well combined. The batter will be quite thick.
5. Transfer batter to a 20 cm parchment-lined brownie pan and decorate with blanched almonds.
6. Bake for 30 minutes.
7. Cover and bake for 10 more minutes.
8. Allow to cool down completely before serving.
